Sensory Evaluation and Fiber Content Analysis of Analog Rice with Moringa Leaf Flour Substitution

Analog rice, also known as artificial is a rice substitute made from combination of local flours, including sorghum flour, mocaf and glucomannan. Incorporating Moringa leaves into analog flour offers potential health benefits due to its anti-diabetic antihyperglycemic effects, which lowers blood sugar levels HbA1C in individuals with Diabetes Mellitus. This study aims develop using sorghum, mocaf, glucomannan determine sensory properties fiber content. employed an experimental design, leaf substitutions divided P1 (0%), P2 (2%), P3 (4%), P4 (6%), P5 (8%), P6 (10%), Completely Randomized Design (CRD). Sensory evaluation was done the hedonic test, involving 25 trained panelists who assessed taste, aroma, color, texture. Fiber content analyzed enzymatic gravimetric test. Data were one-way ANOVA followed by Duncan’s test if p<0.005. The results showed significant effect substitution on (p<0.001 for all comparisons). Based evaluation, preferred (2%). ranged 11.16 13.65% insoluble dietary fiber, 0.60 0.99% soluble 11.80 14.62% total fiber. had difference rice. highest preference level found (2%) while (8%)
